



Founded by Rares Tom Pasare, The Aproned Mixologist & Co was born from a passion for mixology, fine wines, and exceptional service. What began as a small, bespoke bar service for private events in East London has grown into a trusted name in mobile cocktail and wine experiences.
From intimate home gatherings to large corporate functions, our mission has always been the same — to bring bar-quality cocktails and curated wine selections directly to your event, ensuring every guest enjoys an unforgettable experience.

With over a decade of rich experience in the dynamic world of hospitality, I warmly invite you to explore a realm of exquisite flavours, exceptional service, and unforgettable experiences. My journey through Europe's diverse culinary landscapes led me to the UK in the summer of 2016, where I began as Head of Bar for a prestigious fine dining oriental restaurant just outside London.
A year later, I found myself in the heart of London's cultural hub, taking on the role of Assistant General Manager at Osteria within the renowned Barbican Theatre. This experience deepened my appreciation for the beautiful fusion of food and art. Two years on, I stepped into a leadership role at Plate restaurant and bar, housed in the luxurious M by Montcalm hotel. Here, I crafted a unique selection of signature cocktails using mixology techniques, creative infusions, and emerging trends—a combination that delighted guests and earned us the Best Restaurant and Global Excellence Award.
Following the impact of the pandemic, I transitioned into the world of wine, becoming General Manager and Brand Ambassador at Bedales, an iconic wine bar and bistro in London. After three years, my passion for British cuisine led me to Solstice in St. Paul’s, where I embraced the concept of sharing plates with great enthusiasm. During a time of staffing challenges within the industry, I took the opportunity to introduce tailored training programs and strategic initiatives to uphold standards of excellence in trying times.

Nick arrived in London in 2021 and quickly became involved in back-of-house hotel management, where his commitment to high service standards earned him frequent recognition. He joined The Aproned Mixologist & Co in 2022, investing as a shareholder believing in the project, contributing to an increase in overall capital.
Currently, Nick works alongside the team to expand the Aproned Mixologist brand across London and Essex, leading the Guest Experience division and services.

When Mike arrived in London 10 years ago, he never expected to find his calling to be behind a wine list instead of a script. Over time, as he completed his exams and deepened his knowledge, he came to appreciate that every bottle carries a story - one filed with history, craftsmanship, and connection.
